Egg muffin anyone?

Guys, guys, guys!!

I’ve lost over 2kg since the 3rd of Jan. I know I’ve still got quite a way to go but I feel bloody marvellous! It’s amazing what putting the right food into your body does for you.

I did have a small blip on Tuesday though, not eating unhealthily, just not eating enough. I’d come into the gym early to get some cardio done before heading to volunteer at Barnabus in Manchester. I had a protein bar for breakfast. I normally would never do this, breakfast is my favourite meal of the day. But I was on the go and just threw it into my gym bag as I was leaving the house. So after a hectic morning serving up breakfast to the guys who need it most in town I was starving so grabbed a egg mayo butty on my way back to my car. Again, easy to eat on the go but nowhere near enough.

I finally got back to the gym to get my deadlift session in and I was shattered. I drank an energy drink (which I never do) to try and give me a kick but it just wasn’t happening. I did manage to pull 117.5kg for two but it honestly took all of my strength and a major pep talk from Danny. I left feeling a little shitty and definitely climbed into bed straight after my tea to sleep it off. Lesson learnt! Fail to prepare, prepare to fail!

So on Wednesday I prepped up lots of food I can eat on the go. A lovely lady on Instagram gave me a great idea to make breakfast muffins.

Which are delicious. I put bacon, sprouts and cheese in mine but you can try turkey, ham, spinach, onion. Literally anything you fancy. They’re basically mini omelettes but are perfect to put in a Tupperware box and head to work!

I used

• 12 eggs (I aimed for an egg per muffin but I ended up making 21 so maybe use less if you don’t want a large batch)

• 5 sprouts

• 40g grated cheddar cheese

• 4 bacon medallions

I grilled the bacon and cut up into small pieces then added it to the whisked eggs and cheese. I boiled the sprouts and chopped them up small too and added them to mix. Greased my cupcake tin with low cal spray and poured in the mixture.

I then baked in the oven for 10 mins on 180. Stick a knife into one of the muffins and if it comes out clean then they’re cooked. Keep an eye on them though, some rise quicker than others.

On Saturday Bev had her first competition, she absolutely smashed it. Hitting all her gym PB’s and getting all white lights, what more could you want from your first comp!

She was obviously excused from missing Sunday squats!

I on the other hand had to work extra hard because I did indulge slightly on Sunday and went for afternoon tea with my friend. So powered by cake and a really good mood (probably because I’d eaten cake) I squatted 110kg for two doubles. It moved really smoothly and depth wasn’t an issue, so I left the gym in an even better mood. Sunday was a good day 😄.

  1. Hi Jazz! I sometimes make egg muffins but use slices of ham to line the muffin tins with and then add the egg mix like normal, I find they taste so much nicer that way! Also muscle moose pancake mix is so yummy for prepping ahead for breakfasts on the go 🙂 xxx
